Birdhouse Pizza is a Vermont-born mobile pizza concept built around great ingredients, old-world technique, and the energy of gathering outdoors. At the heart of what we do is a traditional Italian pasta madre—a natural sourdough culture that gives our dough depth, character, and a light, expressive crumb.
We pair this slow, intentional approach with high-heat, Neapolitan-style ovens and a modern pan-fired method—creating pizzas that are crisp on the bottom, airy within, and finished with just the right touch of flame. Each dough is mixed, fermented, and handled with care, allowing flavor and structure to develop long before it reaches the oven.
Everything is cooked to order, delivering a style that is fast, consistent, and distinctly our own—rooted in tradition, but built for the way people eat today.
You’ll find Birdhouse Pizza popping up at farms, breweries, weddings, private gatherings, and community events around Vermont. Our setup is compact, efficient, and designed to bring a refined, high-heat pizza experience anywhere people want to eat well and have a good time.
